They were then crushed and de-stemmed with a large percentage of whole berries, and put into a 5 tonne open fermenter. A cold soak took place for three days before the alcoholic fermentation started. Temperature was controlled at around 26 degrees C. After an eight-day ferment was complete a further three weeks skin contact was carried out to enhance maximum colour and flavour compounds. Wine was then pressed out in a large airbag press and pumped straight to barriques for malolactic fermentation and 18 months oak maturation. All batches were racked twice throughout their maturation period in barrel and topped monthly to preserve freshness and fragrance.

The 2022 Redbrook red blend was bottled without filtration before further maturation in bottle prior to release. Our 2022 wine sees a return to a higher (22%+) proportion of Merlot in the final blend for which it is renowned.

region

Margaret River

varieties

Cabernet Sauvignon 72%

Merlot 22%

Cabernet Franc 6%

analysis

Alcohol: 14%

pH: 3.42

TA (Acidity): 6.41 g/L

Gluten Free

Vegan-friendly

[split]

Food Pairings

Rosemary-infused lamb shank casserole with soft polenta.

[split]

Awards

Perth Royal Wine Awards 2025

[badge rating="gold" title="Perth Royal Wine Show 2025"]

National Wine Show of Australia 2025

[badge rating="trophy" title="NWSA 2025"]

Cabernet Blends Trophy

Royal Adelaide Wine Show 2025

[badge rating="gold" title="Royal Adelaide Wine Show 2025"]

Margaret River Wine Show 2025

[badge rating="gold" title="Margaret River Wine Show 2025"]

[split]

//cdn.shopify.com/s/files/1/1139/8708/files/ET_RB_Estate_CabMerlot-3_04a0505a-0373-4970-bd51-a5b8b30d2c3c.jpg?v=1717051989
2025-single-vineyard-albarino
2025 Single Vineyard Albariño

Tasting Notes

colour

Pale straw with green tinges.

aroma

Lifted and exotic with notes of pear and lemon rind with hints of coriander seed and fennel.

palate

The palate is juicy and moreish with a saline backbone supporting endless citrus fruit characters. Cellar 8 years.

[points rating="97" title="Ray Jordan 2025"]

//cdn.shopify.com/s/files/1/1139/8708/files/ET_Redbrook_Estate_Chardonnay_NEW_5debf2e0-49bd-4833-ac7b-c7f1714fecfb.jpg?v=1694130765
2026-single-vineyard-albarino
2026 Single Vineyard Albariño

Tasting Notes

colour

Pale straw.

aroma

Scratched lemon pith and sea salt aromas are in abundance with very discrete and restrained white floral notes.

palate

White stone fruit and green apple flavours steer the palate over a seamless and pure acid backbone.

Natural grape skin textures fan out across the tongue creating a salivating and moreish mouthfeel.

cellaring

Drink now, will age gracefully for 3–5 years.

[split]

Technical

vintage

An abundant winter rainfall in 2025 replenished vineyard dams and soil moisture as the region headed toward budburst.

A very steady growing season followed with a slow ripening period during the warmer months into the beginning of 2026.

In what was thought to be a 'traditional' season picking decisions were unhurried and made purely based upon flavour without the complications of disease or logistics.

Cool nights with typical South Westerly winds retained freshness at picking of white varietals allowed juices with bright natural acidity and flavour and reds that exhibit defined varietal expression.

winemaking

Sourced from a small block within the Amadeus vineyard on February 20, the fruit was harvested in the cool of the night to retain freshness and slow down oxidation processes.

The fruit was destemmed and transferred into the press with minimal crushing.

A gentle press cycle followed where free run juice only was left to settle for 2-3 days in a stainless-steel tank before racking.

The juice was fermented between 12-16°C with a select yeast strain to ensure maximum aroma and flavour compounds were released prior to clarification and bottling.

region

Cowarumup – Amadeus Vineyard, Margaret River

variety

Albariño

analysis

Alcohol: 13%

pH: 3.3

TA: 7.8 g/L

[split]

Food Pairings

Chargrilled octopus with fresh lemon and spring veg from the garden.

[split]
