The vine age dates back to the early 70s and the fruit pedigree can be seen throughout the wines structure. 75% of the fruit was destemmed with the remaining 25% left as whole clusters in the ferment. The ripe stems add further complexity to the wine’s aroma and tannin profile. Beyond fermentation the fruit was pressed and racked to a selection of small and large format French oak for 10 months.
