This produced exceptional quality wines across a large range of varieties and styles with Cabernet Sauvignon and Chardonnay in particular excelling.\u003c\/p\u003e\n\u003cp\u003eThe season started with an early and strong budburst due to warmer soil conditions produced from the drier and warmer than average 2019 winter. This continued into Spring with near perfect conditions experienced during the flowering period (very dry, low RH and minimal wind) which further elevated the potential quality of the coming vintage.\u003c\/p\u003e\n\u003cp\u003eA very dry 4 months with low humidity during the critical ripening period (Jan to Apr 2020) has produced deep, concentrated flavours and highlighted the importance of managing the vine canopies according to the variety and desired wine style. Our established, mature vineyards planted in the 1970’s particularly enjoyed these conditions. \u003c\/p\u003e\n\u003cp\u003eIt was also an exceptional year for the flowering of the native Marri trees which kept the birds distracted from the ripening fruit. The white harvest was over quick with the warm temperatures in early March which then moderated which slowed ripening in the reds and allowed flavour to intensify and tannins to soften. By mid-April we had finished our Cabernet Sauvignon harvest, the latest ripening varietal in the region.\u003cbr\u003e\u003c\/p\u003e\n\u003ch3\u003ewinemaking\u003c\/h3\u003e\n\u003cp\u003eAs usual, the Merlot typically ripened 3 weeks ahead of the Cabernet Sauvignon with the fruit from our Cabernet Franc vineyard being picked last. Each batch was picked and vinified separately and not blended until 13 months later following maturation on barrel.\u003c\/p\u003e\n\u003cp\u003eThe Cabernet Sauvignon was harvested late morning to ensure the fruit reached the winery at ~15C which is the optimum temperature to ensure a healthy, even start to fermentation on skins. The Merlot and Cabernet Franc fruit however, were harvested during the coolest part of the very early morning to achieve \u0026lt;10C fruit temperature so it could be cold soaked on skins for ~5 days prior to fermentation of which part was fermented wild with indigenous yeasts. \u003c\/p\u003e\n\u003cp\u003eThe selectively harvested fruit was destemmed with any additional MOG (Material Other than Grapes) such as leaves being removed before the berries were transferred to small stainless steel static fermenters.  The Cabernet Sauvignon underwent partial wild fermentation before a select yeast culture was added at a low rate to finish fermentation which lasted 10 days. The Merlot and Cabernet Franc underwent partial wild fermentation. \u003c\/p\u003e\n\u003cp\u003eFollowing fermentation, the Cabernet Sauvignon remained on skins for another 3-5 days before being pressed into French oak hogsheads (300L) of which ~14% were new (the balance 1-2yr French oak hogsheads) where they underwent malolactic fermentation. The Merlot and Cabernet Franc however, were pressed off skins just prior to dryness to achieve the desired blending styles and they were matured separately in seasoned French oak puncheons (500L). No pressings fractions were kept separate. The Cabernet Sauvignon spent 14 months maturing in barrel and the Merlot and Cabernet Franc 12 months and were racked ~twice and topped monthly. \u003c\/p\u003e\n\u003cp\u003eThe wine was then carefully blended barrel by barrel and then bottled without filtration before further maturation in bottle prior to release. Rainfall in early January renewed canopies across the region and resulted in beautifully ripe, varietally pure wines that are brimming with perfect, delicate, natural acidity. \u003c\/span\u003e\u003c\/p\u003e\n\u003c\/div\u003e\n\u003c\/div\u003e\n\u003c\/div\u003e\n\u003c\/div\u003e\n\u003ch3\u003ewinemaking\u003c\/h3\u003e\n\u003cp\u003eHandpicked into 10kg tubs which were then cooled for 12 hours to ensure the fruit was 8-10C before being pressed. The cold whole bunches of Chardonnay were then tipped into the press which then squeezed the juice out by the use of an airbag inflating to low pressures – this is the most gentle way to extract the juice and is a prerequisite to making world class Chardonnay wine. The juice was allowed a limited amount of controlled oxidation with the turbid juice then going straight into barrel – 100% French oak puncheons (500L) used with 18% being new and the balance 1yr old. All barrels wild fermented on solids to dryness before a small amount of SO2 was added, and the wine chilled and barrels topped and bunged. No MLF was allowed. Battonage was undertaken on each new barrel every 4 weeks and on the 1yr barrels every 8 weeks. The start of the new year saw much needed dry and mild weather which facilitated ripening before early February saw some additional rainfall which slowed things and dialed up the potential for disease as the fruit started to accumulate sugar and flavour. Our vineyards had ideal canopies and crop loads coming into ripening from the work done during the growing season so faired brilliantly in these potentially challenging conditions. Dry, mild weather then followed which saw Cabernet Sauvignon, Franc and Merlot achieve full flavour with plush tannins and perfumed aromatics – all hallmarks of the 2021 vintage. A tropical rainfall event in mid-April was the line-in-the-sand for vintage to come to a close. \u003cbr\u003e\u003c\/p\u003e\n\u003ch3\u003ewinemaking\u003c\/h3\u003e\n\u003cp\u003eOur Cabernet Sauvignon, Cabernet Franc and Merlot parcels were all picked in April to make the most of the dry, mild ripening period following the February rain event.\u003c\/p\u003e\n\u003cp\u003eAll three varieties were harvested during the coolest part of the very early morning to achieve \u0026lt;10C fruit temperature so they could be cold soaked on skins for ~5 days prior to fermentation. The selectively harvested fruit was destemmed with any additional MOG (Material Other than Grapes) such as leaves being removed before the berries were transferred to small stainless steel static fermenters.  The Cabernet Sauvignon underwent partial wild fermentation before a select yeast culture was added at a low rate to finish fermentation which lasted 10 days. This ensured the soil profile reached capacity and recharged dams in the vineyard. A mild spring followed with October having significantly higher rainfall than average and spring being cool and cloudy in general. Budburst was surprisingly even but late as a result with November flowering also happening under cool (but drier) conditions with some variability in fruit set and subsequent early berry development as a result (~3 weeks later than typical).\u003c\/p\u003e\n\u003cp\u003eDecember and January then provided extraordinarily dry and sunny conditions (a very warm period over Christmas) with no rainfall which saw vine maturity “catch up” to a harvest start of only around a week later than average. A strong Marri blossom helped preserve the quality of the vintage by distracting birds that would have otherwise been feasting on the ripening grapes.\u003c\/p\u003e\n\u003cp\u003eA cooler change in the night temperatures and a light rain event in late February after our Chardonnay had been picked was perfectly timed to refresh the vines and allow for an extended ripening period (“hang time”) and a flexible picking window for the red varieties to ensure full flavours developed and tannins were fine and ripe.\u003c\/p\u003e\n\u003cp\u003eAll varietals achieved excellent quality and ripeness across the region with crop levels lower than 2021 to a more average volume which has further boosted the flavour and balance in the wines of 2022.\u003cbr\u003e\u003c\/p\u003e\n\u003ch3\u003ewinemaking\u003c\/h3\u003e\n\u003cp class=\"MsoNormal\"\u003eHandpicked into 10kg tubs with the fruit then being cooled to 8-10C before being de-juiced. The cold, whole bunches of Chardonnay were then tipped into the press which then squeezed the juice out by the use of an airbag slowly inflating to low pressures – this is the gentlest way to extract the juice and is a prerequisite to making world class Chardonnay wine.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eThe juice was allowed a limited amount of controlled oxidation with the turbid juice then going straight into barrel – 100% French oak puncheons (500L) used with 17% being new and the balance 1yr olds. All barrels were then wild fermented on solids to dryness before a small amount of SO2 was added, and the wine chilled and barrels topped and bunged.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eNo MLF was allowed. Battonage was undertaken on each new barrel every 6 weeks and on the 1yr barrels every 8 weeks. The fuit was selectively harvested before being destemmed with any additional MOG (Material Other than Grapes) such as leaves being removed before the berries were transferred to small stainless steel fermenter. Each variety and vineyard Block was kept separate at all stages until the final blend was put together. The Cabernet Sauvignon underwent partial wild fermentation before a select yeast culture was added at a low rate to finish fermentation which lasted 10 days.
