Paying close attention in the vineyard was crucial in order to capture the optimal ripeness window whilst maintaining freshness and vibrancy in the picked fruit.\u003c\/p\u003e\n\u003ch3\u003eWinemaking\u003c\/h3\u003e\n\u003cp class=\"MsoNormal\"\u003eThe fruit came into the winery in the cool of the morning, was destemmed into stainless fermenters and cold soaked for 24 hours to promote retention of freshness and bright fruit expression.
