The cold whole bunches of Chardonnay were then tipped into the press which then squeezed the juice out by the use of an airbag inflating to low pressures – this is the most gentle way to extract the juice and is a prerequisite to making world class Chardonnay wine. The juice was allowed a limited amount of controlled oxidation with the turbid juice then going straight into barrel – 100% French oak puncheons (500L) used with 18% being new and the balance 1yr old. All barrels wild fermented on solids to dryness before a small amount of SO2 was added, and the wine chilled and barrels topped and bunged. No MLF was allowed. Battonage was undertaken on each new barrel every 4 weeks and on the 1yr barrels every 8 weeks. Consistently warm days and cool evenings made for great retention of acid within the grapes, whilst achieving optimal fruit expression.\u003c\/p\u003e\n\u003ch3\u003ewinemaking\u003c\/h3\u003e\n\u003cp\u003eThe fruit for this wine comes from our vineyard in Karridale, from a specific block identified for its intensity of flavour and great acidity retention. The fruit was picked at 11.9 Baume in the early hours of the morning to keep the fruit cool. It was then crushed to press where we allowed it to macerate on skins for 6 hours to impart an extra level of complexity and texture.\u003c\/p\u003e\n\u003cp\u003eThe fruit was then pressed though with no pressings cut before being settled and racked off heavy lees. The palate is a powerhouse, but it's harnessed and presented with real aplomb. It's still tightly held together, but there is fruit richness here that makes it so appealing even now. The wine was fermented dry then each barrel was chilled and lightly sulfured with no MLF encouraged to retain purity and style.
