After an eight-day ferment was complete a further three weeks skin contact was carried out to enhance maximum colour and flavour compounds. Wine was then pressed out in a large airbag press and pumped straight to barriques for malolactic fermentation and 18 months oak maturation. The 2016 vintage was one of those years. The previous six month growing season gave us below average rainfall which was a concern, but worse than that the flowers on the vines did not set well at all. This was a real concern as the yields were reduced by up to 50% on both red and white grapes. As the growing season progressed into 2016 we did receive some good rain, but some damage had been done with small clusters and tiny berries, although this gave us some of the darkest, strongest and most intense wine we have ever made. These wines need some time, and given at least a couple of years they will show you their true potential. The wine is then pressed out in a large pneumatic press then pumped into French oak barriques for 17 - 18 months oak maturation. This provides an excellent insight into the season and is a delicious iteration of Margaret River Shiraz. Gentle plunging of the must was then done over 10 days to cool the ferment whilst extracting colour and the fine, ripe skin and stalk tannins to achieve the structure and style of the wine.\u003c\/p\u003e\n\u003cp class=\"p2\"\u003eThe Cabernet fruit was handpicked but destemmed to ensure the ferment consisted purely of berries. Fortunately, our vineyards are mature and located on ideal soil types and did not falter at the challenging warm and dry conditions that the 2024 vintage dished up. At completion of the 10 day fermentation, the fruit was pressed to tank before being racked off gross lees to a mixture of barrel (80%) and tank for MLF and maturation for 14 months.
