The cold whole bunches of Chardonnay were then tipped into the press which then squeezed the juice out by the use of an airbag inflating to low pressures – this is the most gentle way to extract the juice and is a prerequisite to making world class Chardonnay wine. The juice was allowed a limited amount of controlled oxidation with the turbid juice then going straight into barrel – 100% French oak puncheons (500L) used with 18% being new and the balance 1yr old. All barrels wild fermented on solids to dryness before a small amount of SO2 was added, and the wine chilled and barrels topped and bunged. No MLF was allowed. Battonage was undertaken on each new barrel every 4 weeks and on the 1yr barrels every 8 weeks. This ensured the soil profile reached capacity and recharged dams in the vineyard. A mild spring followed with October having significantly higher rainfall than average and spring being cool and cloudy in general. Budburst was surprisingly even but late as a result with November flowering also happening under cool (but drier) conditions with some variability in fruit set and subsequent early berry development as a result (~3 weeks later than typical).

December and January then provided extraordinarily dry and sunny conditions (a very warm period over Christmas) with no rainfall which saw vine maturity “catch up” to a harvest start of only around a week later than average. When the decision was made to pick on 27 February 2023, the fruit was selectively hand picked over two days with the fruit then being cooled in a cold room to 8°C before loading the small press with the whole bunches. The fruit was then gently squeezed and the cool, turbid juice went directly into French oak barrels for wild fermentation.

region

Margaret River

variety

Chardonnay

analysis

Alcohol: 13.0%

pH: 3.01

Acidity: 8.01 g/L

[split]

Food Pairings

Baked red snapper with garlic and thyme butter.

[split]

Awards

National Wine Show of Australia 2026

[badge rating="gold" title="NWSA 2026"]

Wine Show of Western Australia 2025

[badge rating="gold" title="WSWA 2025"][badge rating="trophy" title="WSWA 2025"][badge rating="trophy" title="WSWA 2025"][badge rating="trophy" title="WSWA 2025"]

Best Wine of Show
Best White Wine
Best Chardonnay

National Wine Show of Australia 2025

[badge rating="gold" title="NWSA 2025"]

Sydney Royal Wine Show 2025

[badge rating="gold" title="SRWS 2025"]

Perth Royal Wine Awards 2025

[badge rating="gold" title="PRWA 2025"]

Royal Adelaide Wine Show 2025

[badge rating="gold" title="RAWS 2025"]

Melbourne Royal Wine Awards 2025

[badge rating="gold" title="MRWA 2025"]

[split]

Reviews

Ray Jordan, WA Wine Review 2026

Already showing a degree of complexity with that merging of stone fruit, pear, and lime, with some slightly nutty roasted cashew-like characters on the nose.
