But the fruit is ripe, cherried, strawberried, boysenberried even, and cedarwood oak is beautifully integrated, and there’s a minerally crackle to the tannin. In short, it feels and tastes like a class act, and one that will reward cellaring. Fruit was handpicked, and delivered to the winery for gentle destemming, then crushed to a small fermenter.  The skins are handled delicately throughout fermentation to minimise excessive extraction of the Nebbiolo tannins. Temperatures were strictly managed and did not surpass a maximum temperature of 28 degrees. The wine was then gently pressed in the tank before being racked to French barriques and puncheons, 30% of which were new. The palate a similar roll of descriptors, really silky textured, a succulence to tannin, a spicy, lingering finish. Although yields were down, flavour intensity and tannin ripeness in our red varieties is superb and we are particularly excited in seeing how these wines mature in barrel and taste in the months and years to come.\u003c\/span\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003ch3\u003ewinemaking\u003c\/h3\u003e\n\u003cp class=\"p2\"\u003eThe Shiraz fruit was handpicked cool in the early morning so the fruit could be fermented as whole bunches. Each small, 10kg bucket of fruit was tipped into the fermenter and after being kept cool at 10°C for 3 days the bunches started wild fermentation. Gentle plunging of the must was then done over 10 days to cool the ferment whilst extracting colour and the fine, ripe skin and stalk tannins to achieve the structure and style of the wine.\u003c\/p\u003e\n\u003cp class=\"p2\"\u003eThe Cabernet fruit was handpicked but destemmed to ensure the ferment consisted purely of berries. Fermentation started immediately and after 5 days of gentle plunging and extraction, the free-run wine was added to the Shiraz ferment (which was still on skins) with the Cabernet skins kept separate to blend into another wine.\u003c\/p\u003e\n\u003cp class=\"p2\"\u003eFollowing another 2 days, the decision was made to press the ferment off skins, with the pressing’s component blended back into the free-run to give the ideal body and structure to the final blend.\u003c\/p\u003e\n\u003cp class=\"p3\"\u003eThe wine went straight into old French oak puncheons (500L barrels) to mature for 9 months. These larger puncheon barrels ensure perfume and freshness is retained whilst preserving the silky and refined palate along with textural complexity – a difficult goal to achieve in red winemaking. The result is a rarely seen wine style out of Margaret River of Shiraz and Cabernet Sauvignon from some of the oldest vines in the region on the Redbrook Vineyard. Although yields were down, flavour intensity and tannin ripeness in our red varieties is superb and we are particularly excited in seeing how these wines mature in barrel and taste in the months and years to come.\u003c\/p\u003e\n\u003ch3\u003ewinemaking\u003c\/h3\u003e\n\u003cp class=\"p2\"\u003e\u003cspan class=\"s1\"\u003e \u003c\/span\u003eThe fruit was handpicked cool in the early morning of 7th March 2024 (3 weeks earlier than average for this Block) and then destemmed into a small open fermenter when it reached the winery. The pristine berries (~half whole) were cold soaked for 3 days with wild fermentation starting on day 4. Gentle hand plunging of the skins to extract colour and structure without any harsh tannins was done twice daily until halfway through fermentation and then reduced to daily thereafter. Very easy to over extract Cabernet Franc with its small berries and papery skins – so important to take it easy when it is fermenting on skins. We hand plunge and ferment at cooler temps of 20-22°C as a result.\u003c\/p\u003e\n\u003cp class=\"p2\"\u003eAfter 5 days, the decision was made to press the ferment off skins, with all but the very last 20L of hard and most bitter pressings blended back into the free-run to achieve the desired body and structure in the final wine.\u003c\/p\u003e\n\u003cp class=\"p3\"\u003eOnce dry, the wine then went straight into previously used French oak hogsheads (300L barrels) with no new ones. These larger barrels retain perfume and freshness whilst achieving a silky and refined palate along with textural complexity – a difficult combination to achieve in red winemaking. The resultant wine was bottled and released early to capture the essence of our Cabernet Franc style. You want cabernet, you'll find it here. Every piece sits together harmoniously and with great poise. The blackcurrant, dark plummy, chocolatey characters on the nose are lifted with a little bay leaf, dark olive, and a subtle graphite character. The palate is a powerhouse, but it's harnessed and presented with real aplomb. It's still tightly held together, but there is fruit richness here that makes it so appealing even now.
