This vineyard in particular produces high quality, cool climate fruit, with Shiraz that has a spice and bright red-fruited backbone.\u003c\/p\u003e\n\u003ch3 class=\"p1\"\u003eWinemaking Notes\u003cbr\u003e\n\u003c\/h3\u003e\n\u003cp class=\"p2\"\u003e\u003cspan class=\"s1\"\u003e \u003c\/span\u003eThe fruit was destemmed in the winery and transferred to a stainless-steel fermenter, where it was gently pumped over twice-daily for gentle extraction of tannins during fermentation on skins for 12 days. Temperatures were moderated to retain the beautiful aromatics of the Great Southern region.
