2024 Single Vineyard '3A' Cabernet Sauvignon
Tasting Notes
Colour
Deep crimson with vivid purple hues.
Aroma
This wine exhibits hallmark Yallingup Hills Cabernet aromas of red and black fruit, wild berries, salted redcurrant, ironstone and graphite.
Palate
The wine has layers of complexity with blackcurrant, cedar and black olive filling out the mid palate.
Bitter chocolate notes and the finest of ripe tannin profiles carry the wine to the finish with a ripe acidity elevating the wines purity and elegance.
Cellaring
Will continue to improve with careful cellaring for at least ten years from vintage.
Vineyard
This single vineyard wine is grown from Deep Woods Estate’s original Houghton clone block 3 Cabernet Sauvignon plantings which date back to 1987.
High density plantings on own rootstock forces the vines to compete for nutrients and water in the root zone giving fruit with concentrated flavour and tannins.
The block has an east facing aspect with sandy gravel loam soil over clay. This aspect allows the fruit zone and canopy to be drenched with morning sunlight and gives protection from the hot afternoon sun and strong westerly wind.
Approximately half of the block 3 Cabernet, as the rows flow down the hill were separated for this single vineyard wine, giving the purest appreciation of one of Margaret Rivers greatest vineyards.
Technical
Vintage
The 2024 vintage was one of the earliest on record in Margaret River. Consistently warm and dry conditions allowed for exceptional fruit ripeness and flavours with a very well-balanced natural acidity for such a warm season.
Extensive marri blossom resulted in minimal pest pressure throughout the vineyard.
The quality of fruit is fantastic and 2024 has produced some very exciting wines with balanced flavour and structure.
Winemaking
Careful vineyard selection and berry sorting on the 9th of March ensured the fermentation and resulting wine showcases the purest expression of the 3A block.
Fermentation was pursued for 13 days with gentle pump overs and temperature management to extract colour, flavour and a long fine tannin profile.
The fermented must was then pressed to a selection of new (20%) and used French oak barriques for a maturation program of 14 months prior to blending and bottling.
