The Eagle Shiraz is only produced in the most exceptional of vintages in the ultra-premium, cool-climate Pyrenees region of Victoria. Careful viticulture meant fruit was picked at optimum ripeness.\u003c\/p\u003e\n\u003ch3\u003ewinemaking\u003c\/h3\u003e\n\u003cp\u003eSourced solely from the 1977 “Eagle” Block directly in front of the winery. This fruit was hand-picked and fermented as a single batch. Utilization of 20% whole bunches in the ferment and a moderate duration of cold soak ferment was initiated and lasted around 10 days. The resultant wine was pressed and filled to around 50% new French oak barriques with the balance being 1- and 2-year-old for a period of 20 months. Eagles soar over the highest sections of the Dalwhinnie property, hence the name for the winery's flagship wine. Deep and inky purple hues introduce a wine of obvious class, with further ageing on its mind. One for the cellar, but should you open now expect a warm, enveloping opulence filling the mouth with sweet blackberries, cassis, chocolate, spice and a deep-grained earthiness.
